Special attention is paid to the role of chicleros, the skilled laborers who wield machetes to harvest chicle deep in the rainforest, and are considered icons of local pop culture.

focus on non-timber forest products
CUCKOO FOR CACAO
Cutting down trees for lumber is one way of making money. Unfortunately, it can sometimes destroy whole eco-systems and, ultimately, communities. And once trees are gone, they're gone for a long time! On the other hand, harvesting non-timber forest products (NTFPs) like chicle (the tree sap used in Glee Gum), maple syrup, berries, mushrooms, and other plants can provide a sustainable means of income for folks. One of the sweetest, neatest NTFPs is cacao, the source of chocolate!
Cacao trees grow in the shade of larger, native tropical trees. This helps to conserve the habitat of threatened plant and animal species, as well as to protect natural pollinators and predators of cocoa pests. Cacao pods are the "fruit" of the tree, and look a bit like footballs. After they're planted, cacao trees can take up to five years to produce pods; they then continue to produce pods annually until they're twenty-five to thirty years old. Every six months, the pods are harvested by hand (cut down from the cacao tree). Each cacao pod contains about thirty to fifty beans; they look like flat almonds surrounded by a sweet pulp. Chocolate, in turn, is made from the beans!
The ancient Aztecs once told a romantic legend about cacao. They described how their god, Quetzalcoatl, brought the cacao tree from paradise to earth, traveling on a beam of the morning star. He gave the tree as an offering to the people, and they learned how to roast and grind its beans into a paste. They added spices and mixed it with water, calling it "xocolatl" or "bitter water" and believing that it brought wisdom and knowledge to those who drank it. In fact, the scientific name for the cacao tree is Theobroma cacao, which means "food of the gods"!
Cacao continues to be an important part of agriculture in tropical regions around the world.
